lasagna

one day before i started my holiday r. and i made lasagna. i was astonished how easy it was so yesterday i gave it another try with some friends (unfortunately we did not have enough tomato sauce, so the balance between pasta and sauce was not that good. make sure you have at least 600g of chopped tomatoes!). if you want you can easily make it a vegetarian lasagna by just replacing the meat with vegetables such as peas, peppers, corn or carrotts (or mix meat and vegetables). one day i might try to make the dough for the lasagna sheets myself but for now i used ready made ones from the supermarket.

here is what you will need (4 hungry people):
  • sheets of lasagna
  • 320 gr ground meat (half pork/half cow)
  • some oil
  • 1 or 2 onions
  • 2 garlic cloves
  • 1/8l red wine (optional)
  • basil, parsley or whatever herbs you like
  • at least 600 gr chopped tomatoes
  • 50 gr butter
  • 40 gr flour
  • 3/4 l milk
  • salt, pepper, nutmeg
  • at least 200 gr ground cheese

for the filling:
cut onions and garlic and start roasting the ground meat with some oil. now add the onions and garlic and season it with some salt and pepper. (if you want you can deglaze it with some red wine now). then add the tomatoes and leave on the stove until most of their liquid is gone (you don't want your lasagna sheets to swim, right?). start the béchamel sauce and when it is ready you can add herbs as you like or spice the tomato sauce with some hot pepper.

for the béchamel sauce:
the important thing here is to stir it all the time!
melt the butter, carefully stir the flour into it (some at a time) and let the mixture get a golden brown colour. take it from the heat source and stir in the milk. now everything has to boil and then cook on low heat for about 10 min. don't forget the stirring! otherwise your sauce will burn. when it got its thick texture you can season it with salt (white) pepper and nutmeg. i also add some of the cheese. be careful with tasting the sauce as it gets unbelivebly hot!

preheat your oven to 180°C/356°F

use some butter or oil to slightly cover your baking dish with and start with a layer of lasagna sheets. then some béchamel, again lasagna sheets then tomato sauce and repeat.
make sure to end with a layer of béchamel and spread the cheese on top.
bake for about 25-30 min at 180°C/356°F and serve with a fresh salad.

some impressions...

 my mum and i went to a nature conservation day in the next village. we went there with the village museum to show some good old spinning and the way the wool takes from the sheep to yarn.
another woman brought some of her sheep and had this small shop with goods from her sheep.
 
 there were also cows, bees and a horse, of course their owners with their shops and people who gave tours in the nature reserve.
the next photos are from my mums village, were we lived most of my childhood and where i will spend most of my holiday.

arrived in germany

i had a very busy arrival here in germany. my journey started at 2 o'clock in the morning with a ride to the airport, then the usual checking in precedure until around 4:30. the flight should have launched at 5:30 but because of some restrictions at frankfurt airport it was about an hour late.

i arrived in germany, frankfurt around 10:00/ 10:30 where my mum and a friend picked me up. until now i did not sleep except for one hour in the airplane.. on our way to my mums house we stopped at ikea because i was so hungry and would not wait =) and you know how it is if you are inside an ikea it takes some time until you can leave...  so we let around 13:00.

when we got to my mums place my dad was there already, so we had some coffee (as i don't drink coffee only the others drank, i ate again) and i still got no sleep. as soon as i opened my laptop i friend of mine called me on skype. and then another one. she is the one that is going to marry so we went to karlsruhe to have a second look at the changes the tailor made on her wedding dress, still no sleep.

around 20:00 we came home again and i went strait to a great concert (photo above) that my mum helped organizing. it was great. some fusion of gypsy music and jazz, sinti jazz by wawau adler, joel locher and holzmanno winterstein. have a look at their pages! after all that i finaly got some sleep. i will try to keep you updated but as you see there is a lot on my schedule right now =)

fødselsdagsboller (birthday buns)

very simple and very tasty, especially with butter and blueberry jam!
you can either make them with raisins or chocolate (i made half of them raisins and half chocolate).
 
here is what you need:
  • 500g white flour
  • 50g yeast
  • 200ml milk
  • 2 eggs (one for the dough and one to glaze them)
  • 1 tsp salt
  • 100g butter/margerine
  • 50g sugar
  • raisins/chocolate
  • 1/2  tsp ground cardamom (double it if you are using ground cardamom from the supermarket)
  • i also added a very smal amount of ground cloves
  1. warm up the milk until it is handwarm (37°C) and dissolve the yeast in it. now add everything else (except the egg for the glaze) and knead it until it becomes a homogenouse dough (you might have to add some flour). cover and let it sit for 20 min until it doubled its size
  2. roll you dough until it is saussagelooking and cut it in 20 pieces. roll them into balls, put them on a backing tray, cover and let them double their size over the next 30-40 minutes. preheat you oven to 225°C.
  3. glaze them with the mixed egg and bake them (put the tray on the lowest level) at 225°C for about 10-15 minutes.

yesterday was r.'s birthday.
i made fødselsdagsboller (birthday buns?? recipe to come...), ice cream and wrapped mine and my mums presents for him. in my family a birthday is something important and great. a day that you wait for the whole year. but here... he was working all day (he works in his parents company) and i felt like the only one who made an effort to make him happy... that made me kind of sad although the to of us had a great evening.

wordless wednesday

tiberias excavation 2011

finally i have the time to make the post about the excavation i spend a week on. i uploaded some more photos on flickr
tiberias is located on the eastern shore of the sea of galilee in the north of israel. it is quiet an interesting and important site as you find traces of all three monotheistic religions there. 
excavations in tiberias go back over 50 years and cover most period from the calcholithic to the ottoman periods.
in the last years a mosque, a church, a bathhouse, a beautiful mosaic and many other buildings where uncovered.
on this photo you get a good impression of the different layers in the ground and the reason why we dig layer after layer (as every layer is a different time period, which we can then date by the pottery and other finds we take out). 
unfortunately i am  not allowed to post photos of the more exiting finds as we don't want anyone to steel the photos and publish them somewhere. but here some of the smaller finds like glas (1), marble (2) and lots of pottery (3) to give you an impression.

i got my working permit!

i seem to be one of the lucky ones as i got my visa without too much paper war. it "only" took us some months... not years =)
so now the thing is to find a job where fluent hebrew is not required...

but first comes my trip to germany. i am really looking forward to it even if it means that i will be without r. for about three weeks. this is going to be really hard as we have not really be parted since august last year...
 on the other hand i will see my family and friends again and one of my dearest friends is going to marry (the reason for the trip). everyone seems to get married right now...

we have an appointment at the ministery of interior tomorrow morning where we should finally get to know if i will get my working visa or not and r.'s birthday is comming up so i have lots to do =)
we will see where the wind will take us, i am looking forward to it.

my cheesecake experiment

as it was shavuot last week i improvised a cheesecake only using yogurt, a lemon and four eggs for the filling and a very simple base.

the base 
(if you skip the honey you can use this base for quiche as well):
  • 100g flour
  • 75g oat flakes
  • 75g butter
  • 1 tbsp apple vinegar
  • 3 tbsp water
  • some honey

for the filling:
  • 4 cups of yogurt (if you have cream cheese use half half, that might taste better)
  • 4 eggs
  • 1 lemon (best if it is organic as you are going to use the skin too)

what t o do:
  1. mix all the ingredients for the base into a homogeneous dough, cover your baking dish with some butter and spread your dough until it covers the base and the walls of your baking dish. now it goes into the oven for about 7 min.
  2. cut the lemon in quarters and remove the stones (?). now put them in a mixer and mix until you have a smooth something. mix the lemon with the the yogurt and eggs and fill into your baking dish.
  3. bake for over an hour at 140°C/300°F
  4. if you want you can cover the cake with some sugar when it starts to get solid.
  5. make sure to put it in the fridge to get cool (not in the freezer, you wont be able to cut it), and enjoy!!

limitless

i usually don't talk about films i saw on this blog but this one i found truly amazing. or maybe just the basic idea of the possibility to be aware of your whole brain capacity. just think about it. we only use a very small part of our brain and everything else is just working in unconsciousness... what if we could use all of it? what if we had access to everything we ever read, heard, said or did? just think of the possibilities... and the burden.
we could solve all our problems in the world but we would forge even bigger problems as mankind was always selfish, greedy and addicted to power.

the abitur is the highest final exam you can get on a german school and preparing for it is very intense and difficult. i remember it, it was awful. but it is the only exam that enables you to study at a university and with out it your job opportunities are pretty bad.

but enough about the formalities: she made it!
i cant wait to see her again when i go to germany in a few weeks. we will have to celebrate this!

no, i am not vegan and no i am not even really vegetarian BUT i really like the idea of healthy food. so i ended up on this vegan food site - post punk kitchen. and they really have amazing ideas for salads, soups, cakes and all that! (click on the photos to get to the recipes!)

 for all of those who never got in touch with vegans: the basic idea is to not eat anything that is taken from animals (no milk, no meat, no eggs...). so they are the more strict version of the vegetarian idea.

shavuot - the cheesecake holiday =)

this holiday marks the anniversary of the day god gave the torah to the entire israelite nation assembled at mount sinai, although the association between the giving of the torah (matan torah) and shavuot is not explicit in the biblical text.

shavuot is also linked to the grain harvest and the harvest of the first fruits, so in many kibbuzzim you will find harvest parades and celebrations. it is the conclusion of the counting of the omer that starts with pessover. this might also be where the name shavuot comes from (shavuot=weeks in hebrew).

ashkenazi jews made it a custom to eat cheesecake because shavuot is supposed to be a dairy holiday (i could not find any resonable explonation why). but every where i go they are talking about cheesecake these days =)

oh did i metion that i made ice cream?!

after working a bit in the garden yesterday we decided to make it a lazy day. we watched a movie and played a bit on the computer and suddenly we hear this tune....the ice man tune! so we ran out of the house to look for him. how great is that: we have an ice cream guy! 
what a great day =)
we went for a walk afterwards and when we came home i decided to celebrate this wonderful day. so i opened a bottle of cool white wine and i suddenly found myself craving for some more ice cream... as on fridays everything here is closed after noon there was no way i could buy some anywhere so i decided to make some myself. that could not be too difficult. some cream, milk, vanilla, sugar... put it in the freezer, stir it now and then et voila! my first homemade ice cream =)
if you want to make even more refreshing mix some mint into your vanilla ice cream!
you will need about...
  • 1 cup powdered sugar
  • 1/2 cup whipping cream
  • some vanilla
  • 0,5l cream
  • 0,5l milk

making my own pita bread =)

for 15 pitas you will need:
  • 500ml tepid water
  • 50g yeast
  • 2 tbsp sugar
  • 1 tbsp salt
  • 1/2 tsp backing powder
  • 0,8-1 kg flour
    • dissolve the yeast in 100ml of the water. add the rest of the water and all the other ingredients (be careful with the flour and only add a bit at a time because you might need more or less. it depends on your flour and on the humidity in your kitchen). make sure to kneed the dough for about 10 minutes until it becomes  soft and homogeneous. then form 15 small buns, put them on a clean kitchen towel and cover with plastic wrap and another towel. leave it for 10 minutes.
    • cover a surface with flour and roll the buns to discs (diameter 20cm) and let them sit under a towel for 45 min.
    • heat your oven to 200°C/392°F and bake them, three or four at a time until they are golden.

     UPDATE: this is a nice recipe but the pitas are crunchy, if you want your pitas to be soft try this one!
